Given his commentary regarding the "majestic and the miraculous", it is clear that the Chatam Sofer, if alive today, would support reciting the Hallel with a B'racha on Yom HaAtzma'ut & Yom Yerushalayim.

When one learns through the sugya of dina dmalchuta, it seems clear that the halachic continuum included those who believed there was a "divine right of kings" among the non bnai brit.

Simple, perhaps naive answer for the Chasam Sofer's assumption... Benei Noach have a chiyuv to set up din. The melekh is at the head of that. Perhaps the CS held that kavod hamelekh was thus part of the sheva mitzvos benei Noach, and thus already binding on Yoseif.

Alternatively, self-preservation is a toladah of retzichah, and thus under the 7 mitzvos. For that matter, if summoned by a king who could kill you for leste majeste if you don't clean up well, it would be permissible today to shave.
